Oh man, I remember seeing these guys busking in downtown Durham. They were amazing...defineatly worth seeing at the cave.

First off, I lived for 30+ years on the Gulf Coast, so I am more than qualified to determine if this is authentic Cajun food. Let's start with the comment about Louise's. Yes, it was (has gone out of business due to being a takeout place only) much better than Cajun Charlies's. It still needed to be spiced up to be considered authentic. About an 8 on a scale of 1 to 10. Cajun Charlies's, a 5, and I am being generous. I am still not sure what was in the item they called crawfish bisque, but it does not resemble anything close to bisque. Gator was tough because it was not marinated and cooked properly. Etoufee was no where close to anything I have ever come across. Soft shell crab was okay. Fried crawfish tales were average. Boiled crawfish were overcooked. Everything was way under spiced (not sure what the person who commented on everything being salty was on). There was little to no cajun spice in anything. Sorry Charles, but 2 entries and 2 ice teas with tip was $58, so the $60 was not out of line. Maybe that is why you are working for minimum wage and tips (keeping working on those math skills). Would be nice to see Louise's open as a sit down restaurant somewhere and spice things up like normal Cajun food. Will have to try the places downtown, but was not impressed by their menus, but they deserve a shot.
