Maybe you take issue, like I do, with the recipe behind the chopped pork barbecue at The Pit in downtown Raleigh, but there are two inarguable truths behind the place: No local restaurant has a better purely Carolinian appetizer than those barbecue fries, and no local restaurant has taken the stuff of clapboard highway roadhouses and turned it into a high-class, candlelit calling card quite like The Pit. Today, it will add doses of rockabilly, bluegrass and country to the sauce, with a punch of community fundraising serving as the aftertaste. Southern Culture on the Skids, who used to get heretic by throwing barbecue from the stage, headline The Pit's second Cuegrass Festival, with support from Old Habits, Jackass Flats and the Sons of Ralph Duo. The music and company are free, but the food and beer (all from four area breweries) will cost you and benefit both the North Carolina FFA and the W.C. Breeze Family Farm, a 269-acre educational center for agriculture in Orange County. Everything but the squeal, indeed. —Grayson Currin
