Steak Tacos 

It's FIESTA time!

Salsa ingredients:

  • 2 cups diced Roma tomatoes
  • 1/2 cup chopped cilantro
  • 1/4 cup seeded and diced jalapeño pepper
  • Salt & pepper to taste

Taco ingredients:

  • 1 flank steak or skirt steak (3/4 – 1 lb.)
  • 1 tsp. garlic powder, 1 tsp. onion powder
  • 1 tsp. salt, 1 tsp. chili powder, 1/4 tsp. cumin
  • 1 can black beans
  • 1 tbs. hot sauce
  • 2 tbs. oil
  • 1 onion (chopped)
  • Grated Colby, Monterrey Jack or pepper jack cheese
  • Small corn tortillas
  • Preparation:

    Mix salsa ingredients together and let rest in a bowl for at least an hour.

    Cut off any gristle and fat from the steak. Combine all the spices and salt in a small dish, and coat the steak with the rub. Let the steak sit for about 20 minutes or so, then slice into small strips, against the grain.

    Heat the black beans in a pan until soft. Add the hot sauce.

    Heat another pan on medium heat, add the oil. When it is hot, add the onions and some of the remaining spice rub. Cook 5 minutes or until onions are very soft.

    Set your pan on high heat, add the steak and cook quickly until done. Remove the steak and onions; cover with tinfoil and allow to rest for 5 minutes.

    Warm the tortillas and then make a little taco on the corn tortillas with the steak, onions, black beans, salsa and cheese.
