2 cups yellow squash, chopped in rounds
12 okra pods, stems cut off, and chopped in rounds
1 red pepper, chopped
Handful of cornmeal
2 Tablespoons Canola Oil
Salt & pepper to taste
Rinse and chop the vegetables and lay out fl at to dry.
Salt & pepper and let sit for about 5 minutes.
Heat the oil over medium heat and lightly dust the
vegetables with corn meal and then fry on medium heat
Optional: you may also add other vegetables to the
medley: carrots, onions, bell peppers, tomatoes... be as
creative as you wish!
