The granddaddy of them all--the state farmers market in Raleigh--is at 1201 Agriculture Street (I-40 and Lake Wheeler Road, exit 297). Hours are Monday-Saturday from 5 a.m.-6 p.m. and Sunday, 8 a.m. to 6 pm.
