Fresh baked Zucchini Muffins 

A Fall Time Treat!

What You’ll Need...
3 c. fl our
3/4 c. sugar
1 c. coarsely chopped walnuts
4 1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 tsp. apple pie spice
1 tsp. salt
4 eggs
1 tsp. vanilla
3/4 c. honey
2/3 c. cooking oil
2 c. grated zucchini
2 T powdered sugar

Preheat oven to 375 degrees. Grease two 8 1/2 x 4 1/2 inch loaf pans. In large bowl, mix flour, sugar, walnuts, baking powder, baking soda, pie spice and salt. In medium bowl, beat eggs slightly. Stir in honey, oil, zucchini and vanilla. Stir liquid mixture into flour mixture just until flour is moistened. Grease muffin tins or use paper liners. Fill muffin cups 3/4 full. Bake for 15 to 20 minutes or until toothpick comes out clean. When cool sprinkle with powdered sugar.

Yields 29 regular muffins.
