Escazu Artisan Chocolates is the first bean to bar chocolate company in the South! We are a group of former chefs, and food passionate individuals who are dedicated to making the very best in handcrafted chocolate. We source, roast, winnow, grind and hand mold all of our bars, and confections locally in Raleigh, NC.
Escazu was born out of our travels through Costa Rica in 2005, and in many ways, out of earlier repeated travels throughout Venezuela beginning in 2001. It was during the first trip to Costa Rica that we established a lasting relationship with a model Organic farm. From our very first bean to bar chocolate, we have sourced direct trade, certified organic Costa Rican cacao from this farm. These beans are now also Rain Forest Alliance certified! We routinely return to this farm, both to observe conditions, but also to increase our knowledge of how farm, climate, fermentation and drying all affect the finished chocolate. Chocolate making is a continual learning process for all of us, and in striving to improve our knowledge, we continue to improve our chocolate. All of our fine Venezuelan cacao is grown without the use of pesticides or chemical fertilizers. We purchase these beans directly, without the use of brokers or intermediary traders, to ensure that the farmers get the highest price for their cacao.
