Ingredients:
5 Cups chicken broth
4 Cups carrots, sliced
1 Cup onions
1 Bay leaf
3 Tbsp lemon juice
1 Tsp dried thyme
1/8 Tsp salt
Fresh thyme for garnish
Directions:
1. Put everything in a medium saucepan.
Bring to a boil and simmer until carrots are tender. Cool slightly.
2. Discard bay leaf.
3. In a food processor or a blender or using a hand-mixer, process carrot mixture.
Return to the same saucepan. Heat through & garnish with a sprig of fresh thyme.
