Just a word of caution to those who have really sensitive allergies: Amy's Rice Mac and Non-Dairy Cheez is produced on shared equipment with wheat, dairy, and soy; all of Tofutti's products are made on shared equipment with dairy; and so far, the only truly top-8-safe margarine I've found that's regularly available in my area of the country is Soy-Free Earth Balance.

I've found some great mac-n-cheez recipes using Daiya cheese, though, and a decent non-dairy cream cheese made on dedicated equipment called "Follow Your Heart Vegan Gourmet."
