Having eaten at One before the new chefs, and recntly, I concur about the food - and we didn't really mind the price and portion size, somewhat liberating not to be taking home leftovers.
But mentioning the "no rush...or extraneous movement" in the kitchen without noting the continuing parade of 4 or 5 servers rushing by each bearing one dish, seems odd. In fact, no mention at all of service, surely a factor in the diner's experience (and a Michelin rating). While a squad of servers rushed by, we waited a long time for our order to be taken, had to ask to see the wine list, and watched with increasing despair as bread was brought to other tables.
So, the food is great, transcendent even, and worth it, but I might prefer a to go order to enjoy it in calm surroundings.
Also, the word 'anal' seems like an image better left out of a restaurant review.
