I don't think you should be so quick to judge the low-carb diets or "life style choices" if you've only stuck at it "for a few days"!!
I've been eating Low Carb, High Fat (LCHF) for several months now, I lose weight yes, but better than that I have so much energy, don't crave the bad carbs and I feel the healthiest I've felt in years!
The choice of foods available are only limited by one's imagination, research & creativeness. As for "crunch", try Pork Scratchings (Pork Rinds) as a snack, one small bag will keep you full up for hours! :)
