Nice article and it sounds like a fabulous book. I can think of a number of people offhand for whom it will make a fine gift. Regarding the risotto, no need to substitute for parmesan. (I can only imagine how cauliflower puree would not cut it.) There are a few vegan versions already available. (I knew we had arrived when I first tried them.) Yes, thank you very much for considering the animals. All animal agriculture entails unnecessary suffering and premature death. We don't need to eat animal products and, in fact, are better off not doing so. See:
